If you have a Costco you can go now! I don't know how to pronounce it but Krusteaz, makes a pumpkin quick bread mix. The back of the box had a recipe for pumpkin cake, it sounded way easy and I had all the additional ingredients already on hand.
Has four bread pouches. You use one for the cake. You have to have one of those jelly roll pans.
Frosting, yes butter, yes cream cheese, yes powdered sugar, yes yum!
Once cut into three even rectangles you spread the frosting between two layers and you are done.
We went to my sister's last night for a birthday celebration. Luckily she already had a cake, so I popped this one in the fridge, after we test tasted of course. Hubby said it was much better cold. (his second piece later that night)
Recipe below: Only thing I added extra were pecan pieces. The box advertised "made with real pecans", they were ground up, so I really needed some chunks added.
Triple layer Pumpkin Cake
cake:
1/2 cup water
1/3 cup vegetable oil
2 eggs
one pouch Quick Bread Mix
Frosting:
8 oz. cream cheese softened
1/2 cup butter, one stick softened
1 cup powdered sugar
1 teaspoon vanilla
Bake 350 degree oven for 13-16 minutes. toothpick test. Let cool and cut into three even rectangles. Spread frosting between two middle layers, sprinkle with powdered sugar. Refrigerate left overs.

Yummm! I love pumpkin! I made one I'm going to post in a few weeks, but it did not have the delicious frosting. I'm adding this to my 'someday' list, and I'm going to pretend like it's healthy b/c it's made with pumpkin. :O)
