Angel Food Pineapple Cake

Two ingredients is all it takes.




One box of angel food cake, one large can of curshed pineapple.
Mix completely.  I used a jelly roll pan, you can use a 9x13 pan.  I did not grease the pan, but I don't think it would hurt if you did. Bake till brown, no more than 30 minutes in a 350 degree oven.  I luckily checked on mine about 22 minutes after I put it in the oven and it was ready .

It was great plain, but I added low fat whipped cream and strawberries.

It was a hit with everyone.  We had family over for lunch, just a small group of 18.  Even with an added red velvet cake, there was hardly any left and I cut the pieces into really large squares.

Lagniappe Flowers

Making happiness out of sadness. 

Our good friends lost their 24 year old son last week.  The great sadness came over all of us, but especially them.  At the funeral service my friend Kathy asked if we could re-purpose the gifted flowers.  I have a side floral business and she knew I had done this before.  Of course,! And Kathy and all my girlfriends came forward to help.  


The night before I gathered and refreshed all the flowers in vases.  My girlfriends met at my house at nine the next morning.  We "re-purposed" Austin's flowers into 50 small cup arrangements and Kathy and her daughter Jessica delivered them to the nursing home where Kathy's mother resides.  




It was the end of a horrible week, but girlfriends, coffee talk and love survived.

Lake living on the weekends

Mom and Karl get to go every weekend to their place.  We got to spend one night over the fourth of July.


We arrived late, but got there in time for a beautiful sunset.



Mornings aren't too bad either!


Now that is some kind of weekend garden.  


It is Louisiana, so I had to get a picture of spanish moss in the trees.  




The guys solving the problems of the world I guess.  


Karl extended a couple planks along the dock.  He wanted a place to put his bucket of bait while he fished from the dock.  Then had an idea to add four more and... voila.


We took a mornng ride around the lake, here is a great shot of the camp, nestled in the trees.  


Another place on the lake and Mom says she never has seen anyone there. 


Any duck hunters out there?

Happy Fourth of July

I know some people have already started celebrating, taking a full week vacation or heading to the lake early. I at least have decorated the porch a little bit.
